With a passion for cookery budding at a young age, Doktor furthered his natural culinary abilities studying at Rhode Island’s Johnson & Wales University, an esteemed global leader in culinary education, and spent over a decade cooking in various Providence kitchens and pop-ups. A rooted focus for Doktor has always been to source ingredients locally and ethically, where flavor and quality never fall short, even in the most rudimentary of dishes. Having opened up his own New York-inspired deli in Fox Point “Dok’s Deli” and winning Rhode Island Monthly’s “Best Neighborhood Deli” in 2013, it became clear that Doktor had a knack for innovation and leadership in the kitchen shortly after finishing his JWU education. Along with the deli life, Doktor has extensive catering and event-curating experience which shone brightly through “Events by D&M” with partner Mike Mancuso. From live music events to weddings, patrons from any environment shared common grounds through feeling fully satiated by the widespread of their delicious cuisine. Doktor eventually began cooking in the city of Boston and opened up “Explorateur” with Big Night Entertainment Group, Boston’s leading upscale entertainment provider, along with chef and longtime friend Michael Morway. Maintaining this momentum, the duo went on to open up the second location of renowned, award-winning Trillium Brewery in the heart of Boston’s Seaport District. Doktor is currently the executive chef of Flanders Field in Hanover, and has been with the restaurant since its opening in December of 2020. Much of Doktor’s previous influence and experience can easily be gathered through the Flanders Field menu. There is something extra special to be said about creating “simple” foods that become standalone through carefully-selected, well-balanced, complementary ingredients. Anything from northern European cuisine, customary American pub fare, several German offerings, bolognese to poutine, it is apparent that Doktor’s range is vast, yet can be bound together to create anyone’s ultimate comfort food dish with a sublime twist. Food is beyond a necessity – it is a feeling, it is a unifier across cultures, and Tyler Doktor is one to graciously evoke the feeling of “home” through his talent. Over the last 20 years, Chef Michael Morway has made his name one to know in the culinary scene in the greater Boston area. Chef Michael has touched every corner of the Massachusetts culinary space, worked with some of the most respected brands and dabbled in a wide variety of techniques and styles of cooking. In 2013 he opened his own restaurant Nosh Tavern, while also developing and operating Craftship, a personal chef service and pop-up group for intimate gatherings, often featuring local breweries, distilleries and mixologists to complete the unique dining experience. In 2017 he started with Big Night Entertainment Group, opening and operating several of their now successful concepts. From there, Chef Michael opened the legendary Trillium Brewery in the Seaport. Since leaving Trillium he has been with Broadway Hospitality Group, as the Director of Culinary, for the independent concepts that make up the brand. Chef Michael excels in authenticity, especially in regard to representing foreign cooking techniques and dishes. His creativity is limitless, and often a result pulled from a new take on the classics, the chefs he idolizes, or current culinary trends – always making sure his creations are the perfect balance of original, trendsetting, relevant and of course mouthwatering. He is passionate about quality, from the ingredients to the finished dish. Over his years of diverse experience and through connections made, Chef Michael has become notorious for his use of products from small local farms and co-ops in each restaurant he works with, as well as for being a leader in collaboration and innovation. Though he has been recognized with numerous awards and featured on culinary spotlights on publications such as Food Network, Discovery TV, and Guinness World Records, and had an immeasurable impact on Boston restaurants…it has always been the smaller scale pop up events, hyper local ingredients, and authentic connections with fellow food lovers that keep Chef Michael whole heartedly in the culinary scene for over two decades. No connection more so than his with Chef Tyler Doktor. Chef Michael + Chef Tyler have been long time friends and have cooked alongside each other at both Explorateur and Trillium. Now they look for any excuse to collaborate. Most recently chef Tyler was a guest chef for one of The Broadway’s charity-driven Community Suppers.
