Delight yourself in learning how to make the wonderfully delicious tarte. First, learning how to make the pate sucree, or dough, that will be used for three different variations of tartes. The first tarte is the Normandie Apple tarte. It has apples that are deglazed in Calvados and then laid on a Calvados cream. Then, of course the very pleasant Chocolate Caramel tarte. With this one the focus will be on the chocolate ganache and the capricious caramel, which is so easy to overcook. Lastly, the Pear Amandine tarte. Pears are laid on an amandine cream, which we will also learn to make. It is encouraged to wear comfortable shoes as this is a hands on class.
