An Open House at Cleveland Whiskey. Featuring a single-barrel release of Bourbon finished in a Honey Barrel offered at Barrel Strength. The Honey Barrel Finish Bourbon has always been an extra-special distillery-only offering. We didn’t know how special when the whole process started, but this is the third release. Honey Barrel-finished bourbons are rare. This bourbon rested patiently in a barrel that previously aged honey. Not just any honey, local honey from Akron Honey. Brent Wesley and Akron Honey Company have been harvesting urban honey in Akron for more than 6 years. His motto is ‘it’s all about the flavor’ and that is something we share. Flavor Rules. After an introduction was made, we embarked on a flavor journey–starting with Honey aging in a freshly emptied bourbon barrel yielding bourbon barrel-aged Akron Honey. Then we refilled that barrel with our bourbon to get quite literally our own take on a Honey Barrel. It is something out of old-bourbon lore. It is the quintessential ideal bourbon barrel. We present this bourbon non-chill filtered and bottled at barrel strength to preserve as much of the natural honey and bourbon character as possible.
