Raffetto's Palate: Cooking Classes A new menu will be featured at each class. Participants will learn how the ingredients work together to make delightfully delicious dishes. Cooking will happen in teams of 2 or 3 and after all the cooking is done it will be time to taste! October 20 Menu: Austria and Germany ~Pork Schnitzel ~Spätzle with caramelized onions & spinach ~Apple Strudel with puff pastry November 3 Menu: Columbia and Bolivia ~Colombian Potato Soup | A one-pot meal with chicken, corn, and avocado ~Bolivian Tawa Tawas | A favorite in Bolivia — see if you agree, I know I do! November 17 Menu: From Jamaica to the UK ~Savory and Sweet Hand Pies | Hand pies with a variety of fillings including Jamaican-style meat, vegetarian, and fruit with cream cheese for dessert December 1 Menu: Italy – Deliziosa! ~Artichoke Bruschetta ~Calabrian Ricotta Dumplings | Southern Italy’s best chicken soup — ricotta is the star of the night so we will make it from scratch ~Cannoli Cream Cake About the Instructor: Susan Raffetto comes from a long-line of food entrepreneurs. Since 1906 her family has owned and operated Raffetto’s Pasta in New York City. Susan has been cooking for family and friends for many years. Hosting birthday, engagement and reunion parties from her home. Susan will be on the program schedule for Stonington Community Center offering cooking classes on Thursdays. While Susan’s background is Italian, she has broadened her cooking to entice any palate.
