Advice / consulting / partner for a food startup project

I am looking for a person with experience in catering or restaurant industry to advise on a food startup project. The ideal person would be someone who works or used to work as an executive chef or manager for a larger restaurant and has a very good grasp of the logistics and economics of running this kind of food establishment. I will also appreciate a referral to a person with that qualification.
