This class will be partial demo and full hands-on participation. We will work with a whole lamb and talk through how to break it down into parts and work with each half of the animal to get a variety of cuts, roasts, chops, etc. Lamb is a global meat and is a wonderful gateway to a variety of cuisines and culinary exploration. Each student will get a chance to participate in cutting, sawing, seaming and grinding. This class is best for those who want to learn more about lamb and how to utilize all it’s benefits as well as hone in on a variety of knife skills. Each participant will be able to take home 15-20 LB of locally raised lamb. Cost is $140/person
