People don't often think of corn as an ancient grain but it is. It's literally thousands of years old and created by ancient farmers in Mexico. The corn we know today has no resemblance to its wild ancestors that still exist through out the Americas. In this class, we will discuss its origin and significance throughout modern human history. We will participate in a hands-on experience of transforming dry kernels of corn to Masa through the little-known and amazing process referred to as nixtamalization. After processing the corn we will hand grind the cooked corn make tortillas and top them with farm-fresh ingredients! Bring anything you want to add dishes or ingredients you want to add to our handmade tortillas! Walk-up purchases the day of class will incur an additional $5 charge, so make sure you purchase by 11:30 PM the night before class!
