Seated & Guided Tasting at Wine Republic Tickets: free, wine club members, $15 non-members Presented by Logan Fleischman, Tradition Wine & Spirits “I love showing off and rapping about all my producers, but I have a deep appreciation for Union Sacre that I can't gush enough about!” These are not wines of privilege and power, these are wines made from a lifetime of labor for the un-televised tables that unite the very heart of the world. Union Sacre exists at the meeting of worlds. Made by two long time friends, Xavier and Philip, who arrived at the Central Coast from opposite ends of the Earth. Xavier is a WSET certified, oenology degree holding ex-boxer from France, Philip is a self-taught designer from Michigan who kind of misses living in a van. Between the two of them, Xavier and Philip have 25+ years experience working in Central Coast wineries. Xavier has been cellar master or assistant winemaker for some of the Central Coasts most luminous wineries, including: Sans Liege, Arcadian and Herman Story. Philip cut his teeth at Proof Wine Collective before taking on the creative director role at Herman Story and Desparada. The wines of Union Sacre are focused on elegant, single vineyard, single varietal wines that are table friendly. Union Sacré Skin Contact Dry Riesling, 2021 
100% Riesling sourced from the Rancho Sisquoc vineyard in the Santa Maria Valley. The wine is fermented on skins for 30 days in neutral wooden tank, then aged for 8 months on fine lees. Fresh on the nose, with loads of ripe, sweet citrus and notes of fresh herbs and wet stone. Juicy, grippy, and tangy on the palate, with a lingering finish of apricot and dried peach. Union Sacré Sylvaner, 2021 Sylvaner is a less-known grape varietal of Alsace, France origins. Union Sacré Wines pride themselves on maintaining French traditions at their winery in California’s Central Coast. This exceptional bottle of oft-forgotten Sylvaner is part of a remarkably small bottling (only 200 cases were made). This is a beautiful, dry wine full of floral notes alongside peaches, lemon rind, apple, asian pear and flint. Union Sacré Pinot Blanc, 2021 The 2021 Pinot Blanc is dry with notes of cantaloupe, pear, peach, raw almond, lemon zest and white pepper. An ode to Alsatian-style wine. Such a crowd pleaser and a perfect pairing with fruit salad or grilled veggies. Santa Maria Valley Union Sacré Pinot Noir, 2021 This fragrant and expressive Central Coast Pinot Noir features sustainably grown fruit from Edna Valley and Santa Rita Hills and saw 14 months in 60% new French oak, with the remainder aged in neutral barrel. Showing vibrant red raspberry preserves and crunchy sour cherry fruit, this is pure, fresh, lacy and delicate in the most perfect ways. Union Sacré Cabernet Franc, 2020 Dry Creek Vineyard is situated on the east side of Paso Robles California. The soil is sandy with rocks and some parts have clay. Paso Robles climate is ideal to grow Cabernet Franc as nights are cold which helps to hold the acidity in the grapes. Fresh pepper, blueberry, plum, violet with some of Cab Franc earthy signature. Union Sacré Syrah, 2019 A beautiful cool-climate Syrah. The grapes were fermented in tank for 3 weeks (50% whole-clusters) and aged in both French oak (60%) and stainless steel (40%). Aromatics of black fruits and fine herbs. The palate shows loads of varietal character, red and black cherries, plums, a hint of lavender and a touch of white pepper. Beautifully balanced, elegant style. Finishes with soft tannins, bright acidity and a bit of spice. 650 cases produced.
 Critical Acclaim, Wilfred Wong of wine.com, 90 Points COMMENTARY: The 2019 Union Sacré Paragon Vineyard Syrah packs excellent richness while maintaining a delicate balance. TASTING NOTES: This wine offers bright aromas and flavors of black fruit, licorice, and oak. Try it with grilled short ribs. Reservations required.
