If you have access to fresh herbs, you know that they offer the chance for you to elevate whatever dish you are preparing. Sweet Basil, Tangy Cilantro and Fragrant Rosemary are just a few that are readily available. Home gardeners and smart shoppers often find themselves with a surplus of these herbs and many others. Today’s demonstration will offer a few techniques that will allow you to lock in those flavors so that they are ready to use when the mood strikes. We will explore a combination of pestos, infused vinegars, oils and butters to capture the flavor and aromas of your herbs. Today, we will demonstrate two pestos: A traditional Italian version based on basil and garlic as well a more contemporary Asian inspired pesto using cilantro, peanuts, ginger and scallions. We will also assess our local bounty and determine which are candidates for preparing a variety of infused oils, butters, vinegars and salts! Chef Fred will bring a handful or dried spices that will allow us to complement and customize our herb infusions and maybe package a few for some lucky guests to take home.
