Latin-Inspired Farm to Table Harvest Dinner at Rockledge Lodge
South of the Border, Smokebrush Farm style. The Smokebrush Foundation for the Arts is hosting a Latin-inspired Farm to Table Harvest Dinner on September 22 at the historic Rockledge Lodge at Sun Mountain, in Manitou Springs, in honor of National Hispanic Heritage Month. The gourmet buffet will include three courses with multiples choices at staggered times during the festive evening. The evening will also feature live music by Juanito Vargas.
The evening will start with Farm fresh vegan Gazpacho, fresh Cucumber Salad, and Curtido, an El Salvadorian pickled vegetable slaw. Next comes the entrees featuring Monterrey Chicken seasoned ever so slightly with paprika, served on a bed of rice and garnished with avocado; and vegetarian tacos filled with Anasazi beans, mushrooms and a red Mole sauce. Completing the feast will be a Mexican chocolate desert.
