The chemical composition of liquor is ethanol, which generally contains trace fusel and ester substances. The concentration of edible liquor is generally below 60 degrees (60%) (a few above 60 degrees). Liquor purified by fractionation to more than 75% is medical alcohol, and purified to more than 99.5% is absolute ethanol. Wine is made from grain by fermentation.
