Third Course- Pan Seared wild caught mahi-mahi with a Boursin cheese and basil risotto, citrus Compass Rose Shadows on the Wall New England IPA Burre Blanc, mango jalapeno Pico de Gallo and charred asparagus
Fourth Course-North Carolina B&W Roasters espresso and ancho chili rubbed, smoked CAB beef brisket with a Compass Rose Up & At'em Porter demi-glace with wild mushrooms and fresh thyme, parsnip puree and roasted carrots
