Friday September 2nd At 6pm. Exciting news for this dinner. Guest Chef Chris Viaud will be taking over the kitchen, and showcasing his talents for us. Chef Chris loves working with wild mushrooms and we just happen to have multiple species available right now. Chicken of the Woods, Lobster Mushrooms, and Chanterelles could all be on the menu for this one. Chris Viaud, a James Beard Award semifinalist & Top Chef Alumni, is the chef and owner of Greenleaf and Ansanm, both located in Milford New Hampshire. Upon graduating from Johnson and Wales, Viaud moved to Boston where he spent three years at Deuxave, where he worked his way to Sous Chef. Since his time in Boston he has been an essential part of multiple restaurant openings in the Greater Boston and New Hampshire area. Viaud focuses primarily on seasonal locally grown products which inspire his menu creations. He plans and executes a balanced meal that incorporates different flavors and textures that entertain the palate which allows for a unique dining experience each time. Chef Viaud has recently begun focusing a lot more of his time and energy into the exploration of his Haitian Heritage, including finding new ways to introduce and educate communities around the beauty of Haitian cuisine and culture. Dunk’s Mushrooms Products and Foraging in Brentwood, NH provides quality mushrooms to restaurants, stores and farm stands all over the seacoast, has a retail shop open 6 days per week, and a licensed food processing facility ( Dunk’s Kitchen ), where we process all of our mushroom based frozen and shelf stable products. We also make and package other products for local businesses and farms. For this private dinner we will welcome 16 quests into our working farm. You will be seated at a family style table just feet from where the mushrooms grow and are harvested. We also have 2 pairs of VIP tickets available to sit in the kitchen and watch all the action while enjoying your meal. VIP tickets include a special, fifth course. As always mushroom coffee will be brewing, ice water flowing, but, you are encouraged to bring any beverage that suits your fancy. This is a B.Y.O.B event. Doors open promptly at 6:00.
