When the garden is giving basil by the bushel and the markets are full of the sweetest corn, this corn and basil coconut rice brings all those flavors together in this ode to late summer. We start with fragrant jasmine rice cooked in basil-infused coconut milk and finish with a shower of fresh corn and toasted coconut chips. It makes for an excellent side dish, but thanks to hearty, protein-rich edamame, a bowlful could easily be considered a meal. How’s that for the power of plants?
