Description

In this class, students will both observe and taste the making of the special dish of Yucatan called tacos en escabeche oriental. En escabeche is a technique that uses recado, a paste mixture that consists of the following ingredients: toasted garlic, roasted onions, cumin, chiles and more. These ingredients are mixed with vinegar and used as a rub for chicken or turkey. The chicken, or turkey is simmered in a flavorful broth and finished on the grill to accentuate the recado flavors. The term oriental does not mean that the sauce was inspired by the orient, but holds origins from the Eastern peninsula of the Yucatan. The students will get to try these freshly made tacos.
