Chin-Ling Nelson is from Taiwan and grew up learning to cook Chinese Fried Rice from her mother. This type of rice preparation is a staple in many parts of Asia. It is thought to have originated in the 6th century AD in China during the Sui Dynasty. It is the ultimate reduce-reuse-recycle dish that allows you use leftover rice, veggies and meat and create a scrumptious meal that is beloved by people all over the world. Many families and regions have their own versions of this versatile dish.
