The Seacoast NH Region is home to over 100 species of edible wild plants, with Shagbark Hickory being among the very best of them. Join Russ Cohen, wild edibles enthusiast and author of Wild Plants I Have Known…and Eaten, for a two-hour, “hands-on” program at Bedrock Gardens focusing on Shagbark Hickory nuts, Russ’ #1 favorite wild edible. Russ will share his time-tested tips and techniques for: identifying and locating Shagbark trees; when and how to gather the nuts, in large quantities; how to separate the sound nuts from the ‘duds’; how to store the nuts, for eating or for propagating new trees from; how to get the nuts open, and separate the nut meats from the shells; and what to do with those nutmeats once you have them. Russ will bring along helpful handouts, as well as samples of tasty treats made from Shagbark Hickory nuts. All class participants will get the opportunity to test their skills at opening the nuts, and will also be able to take home some nuts for eating and/or planting.  Time permitting, the class may also poke around the ‘shaggier’ sections of Bedrock Gardens to look for additional wild edibles.          Russ Cohen has been eating wild foods since he was a child. What started as casual family foraging outings developed into a full-fledged obsession in high school. After earning a master’s degree in Natural Resources and a law degree from Ohio State University, Cohen returned to Massachusetts and worked for the state’s Riverways Program for more than 25 years (retiring in 2015), as well as for The Nature Conservancy and the Massachusetts Audubon Society. He leads dozens of natural edible food walks and talks each year and has begun a nursery to propagate edible species native to New England.
