Looking for some unique restaurants between Leesburg and Gainesville

I'm going to have some time off over the next several weeks and will be visiting some of the museums in Ocala and Gainesville, what restaurants are unique or really excellent I should try? Not the usual chain restaurants. Maybe something on the water or foreign cuisine? Thanks I will be interested to see your responses
