We're honored to host Marcos Cortés of Tinacal y Destilería de Pulque Tetitla, nestled in the valley of Teotihuacan, and preserving ancestral traditions of cultural richness. We're going to showcase a destilado de pulque cocktail as an apéritif, and Mr. Cortés will present his three marques of Pulque Spirits: - Joven traditional, wild fermented. - Reposado, the traditional aged 3 months. - Joven especial, wild fermented still strength. The aguamiel is hand harvested from Agave Salmiana and Agave Mapisaga (Magueyes: manso, carrizo, cenizo, verde, xilometl, ayoteco, pua larga, prieto, and others). They collect the agave sap twice a day for 90 days when the plant is ripe. And they continue to perform ancestral techniques and artisanal processes to collect and ferment the pulque, just like it's been done for millennia. Join us for this amazing adventure and insight into the past, and current and future traditions. Master of Agave Spirits, Oscar A Montes Iga, Guild Certified Senior Wine and Spirits Instructor is primary contact hosting this seminar, and will be at hand to translate any information between parties (special guest and attendees) as needed.
