Soft cheeses are cheeses that can be made in a relatively short period of time and generally have a creamy texture. In this class we will talk specifically about how to make Chevre, Cream, Mascarpone and Ricotta cheeses. Ricotta will be make in class from start to finish and the others, because they have to sit a bit, will be ready in the different stages to show you what to expect.
