Cream Puffs begin with creating a pâte à choux pastry dough. Choux pastry, or pâte à choux, is a delicate pastry dough used in many pastries. It contains only butter, water, flour, and eggs. Instead of a raising agent, it employs high moisture content to create steam during cooking to puff the pastry. The pastry is used in many European and European-derived cuisines. In this make and take session, students will watch a demonstration on how to mix the pastry dough and bake the shells for cream puffs. Then under the guidance of Chef Gina, they will mix their own pastry dough, pipe and bake. Chef Gina will share a technique for stabilizing and whipping the cream. Once cooled they will fill their pastries with whipped cream and dust with powdered sugar. Take home 9 two-inch cream puffs. That is if they make it that far. :)
