Simple answer: It provides steady work. While doing original music is surely one path for a musician, there are far more musicians making a decent living doing covers. Not everyone is a prolific songwriter, but they may be an excellent musician. Personally, I sprinkle a few originals in my shows, but ultimately, the audience wants familiarity. Music is music, no matter who wrote it or performs it.
