For that reason, Fonte Farms has designed a dinner series showcasing a variety of chefs from the South Florida area and beyond. We provide an intimate dinner setting meant to showcase the creativity within the food industry that may not be experienced in a traditional restaurant setting. We do this by developing a space for our chefs to expand their menu beyond the limitations of traditional dinners and for our guests to be immersed in the process, first hand. We also partner with curated sommeliers to give a unique experience to our guests. As the food industry continues to evolve, Fonte Farms strives to bring new elements for all to enjoy. Chef Eduardo Lara To Chef Eduardo Lara, the taco is more than just a midnight meal; it is a lifelong obsession. Eduardo was born in Mexico City but has been living in Miami for the last 19 years, visiting his hometown ever so often. Through his limited trips he developed a longing for the sensation of eating a fresh taco on the street corner. At 15 years old, committed to authenticity, he brought with him from Mexico a "trompo" and a hand crank "tortillera" ; thus, starting his journey in the culinary world. After working at some of Miami's most notable and refined restaurants, and hungry to exceed the expectations of his past and present mentors, Edurado looks to bring his brand of fresh, affordable, irresistible street tacos to the Miami food scene. Cocktails by Bobby Gilardi Many close to Bobby from an early age would say that he was destined to be in F&B. His parent’s had a beautiful bar in their family home which is where you would often find him serving up cold beer, “Cuba Libres”, and eight ounce pours of Black Label to his “tios”. His grandfather, at one point, owned and operated two French restaurants in South Florida; one of them being in the heart of Brickell. Bobby’s father would eventually follow in his footsteps, which Bobby and his brother, Alex followed right behind. Bobby’s original passion for tending bar came from the rush of feeling as if he were performing in front of a crowd. “It’s like a dance”, Bobby would describe, “when you and the other bar staff are in rhythm moving around each other. There’s no better feeling than being in the zone like that”. He would eventually go on to learn from some talented names in the beverage scene, and find true passion when he was given the reins to create on his own. Bobby enjoys paying homage to his city of Miami, and his Cuban roots through his work. “I wouldn’t say I have a certain style, because I love classics, moderns, tiki, Japanese culture, all of it”, Bobby says, “it really depends on who the cocktail/menu is for, and/or the occasion”. It goes without a doubt that whatever the occasion is, Bobby is certain to give careful thought and detail to provide the best experience for his guests and clients.
