Join us at PIF Westbury for a family-friendly country fair style morning of fun: the PIF Eggplant Extravaganza! This July Plant It Forward will be spotlighting one of our bountiful summer vegetables: the eggplant! The eggplant is one of the most diverse and widely used vegetables around the world! We would love for your cuisine to reflect the diversity and cultures it represents! Only one eggplant will be crowned victorious! Goal: Enter a dish into the Country Fair Cook Off Competition which spotlights the eggplant! Keep in mind, attendees will be tasting your dish, please make enough to share with the community. Let us know if we can feature your dish on our Veggie Guide and PIF Newsletter! ([email protected]) PIF will provide food allergy cards for the day of. We will be documenting food information on these cards for dietary restrictions (Ex: nuts, dairy, vegan, vegetarian) The winner will receive two tickets to Jack Johnsons 2022 Summer Tour!
