I am visiting Arizona!! Pair Cupwork and I are hosting this Pour-Over Class to launch “OTEMAE coffee” by CAFEC and have a coffee ceremony brewed by me and the coffee shop owner! This pour-over class is a special event and introduces you to brew a cup of delicious coffee. The class guides you through the dialing-in process as we look to maximize the flavor potential by using a premium pour-over brewer and signature CAFEC filters. What are we learning? You can expect to take home some simple yet effective recipes that are sure to give you delicious results on your next brew. Our names are Kimhak and Eugenia and our hope is to spread happiness through coffee and tea! Kimhak runs our coffee bar located in Downtown Mesa, Arizona. With his experience behind the bar, he provides practical insight into our design choices. He also roasts our micro-batch coffees. Lotus Water The minerals in your coffee matter The minerals in the water with which you brew have a huge impact on the flavor of your coffee. Unfortunately, the tap water in most parts of the world is simply not up to the task of brewing great coffee, even when filtered. Lotus water lets you craft single dose bottles of water for brewing at home with the minerals dialed in to the sweet spot. Nick Chapman - Founder Nick's coffee journey started shortly after graduating college when he decided to search for a superior beverage to whatever vile liquid was coming out of the break room coffee machine at his first office job. After discovering a local café, Provision Coffee, his interest in the world of specialty coffee blossomed. The next few years were filled with lots of reading about coffee and home experimentation. After discovering the incredible power for water to influence the flavor of coffee in pour overs and tired of a kitchen that looked like the set of breaking bad with all sorts of white powdery ingredients, Nick set out to find an easier way to make water for coffee at home. When finished, Nick was so pleased with how easy to use the final product was that he decided to share it with others to see if they found it fun and interesting as well. What do the different ingredients do? Magnesium and calcium both contribute to your water's hardness. Increasing these is like turning a dial on the extraction power of your water. There's a limit though, if we go too high you can pull in undesirable flavors and/or mute some of the more complex ones. Calcium tends to accent sweetness of coffee but maintain clarity while magnesium helps add complexity of flavor and mouthfeel. Playing around with varying ratios of these ingredients can fine tune dialing in a new coffee. Potassium Bicarbonate and sodium bicarbonate contribute to water alkalinity. Both of these ingredients have a direct effect on your beverage acidity by serving as a buffer to changes in acidity during the brewing process. Sodium lends itself to a smoother cup and can help cut bitterness if the roast is darker or extraction is high while potassium lets the fruit flavors shine through in a fun and interesting way.
