anyone have a Ebike need help on riding

I bought a Himiway cruiser step-thru 48v battery,before buying they looked easy to ride, since i watched some video, now it scare me to take a ride, as im a 70 year old guy. the video say the bike has a lot of power,you have to watch out if u r in power assist 1-5 as bike will take off fast. I just need tips on riding it easy, thanks for any help
