Can you level an uneven floor?

Hello, I live in a small condo from the 1910's and the floors are really uneven. Seeking a skilled tradesperson to level the uneven floors and put in a new floor. I think the kitchen and bedroom need leveling the most and I hope that the whole condo doesn't need leveling. Wish to get this work done in the month of July.
