After successful runs in Chicago, Denver and Washington DC, Chef Brumback returns to his home city where he began his career at 16 years old, while attending his school district’s vocational school, as a student in culinary and hospitality management. Brumback furthered his education by moving to Denver to attend Johnson & Wales University. After culinary school, Brumback took on influential roles at many high-profile restaurants, including Napa Valley’s Bouchon and The French Laundry, Chicago’s Blackbird, Grace Ria, and Roister. Brumback’s style is rooted in French technique and driven by seasonality. With a focus on quality ingredients, you’ll find classic dishes with a modern spin helming the menu. Chef Brumback brings an approachable and fun ambiance to his restaurants so be prepared to sit back, relax, and enjoy every bite. MEET THE DISTILLER The Holladay Distillery delivers more than 166 years of rich history and is where real Missouri bourbon is made. The distillery is still home to a limestone spring first discovered by Lewis and Clark in 1804 and a still house that dates back to the mid-1800s when Ben Holladay first started using limestone water to make bourbon. Ben Holladay went on to great fame and fortune as the “Stagecoach King,” running the stagecoach lines from Missouri to the West Coast that later became the Wells Fargo Express, and ultimately acquiring the Pony Express as well. He was a serial entrepreneur who owned saloons, hotels, and silver mines, and by 1864, he was the largest individual employer in the United States. Little did he know that his distillery would become the lasting legacy that carried the Holladay name well into the future. The distillery has grown in size and expanded its portfolio of products. In 2016, the distillery commemorated 160 years and paid homage to its founders by going back to its bourbon-making roots and bearing the proud name of Holladay Distillery, operated by McCormick Distilling Company.
