Course #1 Maitake Mushrooms - Black chick pea hummus, Roasted veggies, Zatar spice, Pepper coulis. Paired with Haggen - 5.2% Extremely light, crisp lager made with NYS malt and locally farmed Cascade hops. Ultra-crushable. A perfect introduction to craft beer. Course #2 Fish - Orzo with lemon, crème fraiche, and mint, Roasted fennel. Paired with Strummer - 6.0% Starts with a nice, light Belgian note of banana and clove, which transitions nicely throughout the palate. Light bodied with a crisp finish. Course #3 Confit Duck Leg - Carrot puree, Roasted rainbow baby carrots, Jus. Paired with Frosty Pops - 7.0% Super strong notes of citrus, mandarin, and tangerine on the nose, which blends nicely into a super soft, full body. Very minimal bittering and an extremely velvety finish. Course #4 Beef Osso Bucco - Braised in Buckstar, Cauliflower puree, Collard Greens, Beef reduction. Paired with Bourbon Barrel-Aged Blackalicious 2020 - 9.3% Our Belgian Imperial Stout aged in Tommy Rotter Bourbon barrels. Notes of rich chocolate, caramel, and brown sugar with an extremely full body. A mild warmth on the back end with a crisp finish. Course #5 Mango Dessert - House made ricotta with orange zest and mango, Fried mango chips, Fresh mango slices, Browned sugar drizzle, Mint. Paired with Pineapple Sticky Icky - 6.0% This hazy iteration of Sticky Trees has all the same notes of citrus and grapefruit on the nose and front end, with plenty of the expected dank on the back end. The difference is in the hazy body that is full and soft, and the loads of added pineapple puree!
