Hello Humboldt: A Five-Course Food & Beer TastingBringing years of Fine Dining experience to new home, Humboldt County, Chef Rochelle H. Burgess aims to elevate the dining scene and unveil her repertoire by launching an intimate pop-up dinner series featuring the finest local ingredients. Moving to Humboldt from Brooklyn, New York, Chef Rochelle operated as a successful Chef for a little over a decade. Grateful to work for some of the industry’s best Chefs, including Daniel Boulud, Francois Payard, Dale Talde, and Tom Collichio, to name a few, the Jamaica-born Chef says her interest in a culinary career was sparked early on, inspired by the Food Writings of Clementine Paddleford. “Awed by the agricultural community, ‘Hello Humboldt’ is an opportunity for me to share my skills in kind.” said Burgess. “I’m anticipating this to be a memorable introduction, the first of many great culinary adventures.” After graduating from The Institute of Culinary Education in 2013 with a degree in Pastry and Baking, Chef Rochelle continued her career and honed her skills at critically acclaimed restaurants DB Bistro Moderne, Francois Payard Bakery, Collichio & Sons, Talde, Calissa, Colonie, and Bar Beau. During her stint as Sous Chef at Fort Defiance, Chef Rochelle was a contestant on Food Network’s Chopped. Drawing inspiration from the many different cultures she grew up around, Chef Rochelle’s approach to food focuses on seasonal and sustainable ingredients, utilizing them in innovative ways with an emphasis on New American Cuisine. A fine fit for the hyper-local food culture synonymous with Humboldt County, on June 10th local foodies can indulge in a five-course food and beer tasting during this one-of-a-kind evening event. The menu, drafted by candlelight, features ingredients that have been carefully selected to pair perfectly with core and specialty brews from Mad River Brewery, one of Humboldt’s oldest and well-loved craft breweries. Helping guests enter their palate-pleasing journey, the tap room, which features a list of core favorites and seasonal varietals, will be transformed for the night for the exclusive pop-up event.
