Join us for an all VEGAN and all DELICIOUS dinner with chef and Head of Freshlist's Culinary Operations and Logistics, Matt Martin! THE DEAL: This is an indoor seated community dinner. Buy tickets with your group, but also get ready to meet new faces! Doors open at 6:30pm. Dinner starts promptly at 7pm. Dinner vibes provided by vinyl DJ extraordinaire, Vance Lin. THE FOOD: 5 Vegan Courses. Thoughtful pairings with a locally made Free Range Beer. 1ST: AMUSE: Shallot Jam, Viva raw cheese, Lavash cracker, PAIRING: ALL YOU KNEAD IS LOVE A Carolina Wild Sourdough Ale, 99% LOCAL 2ND: APP: Cauliflower miso bisque, caramelized cauliflower, smoked pecan oil, made with all you knead, Dukes Pretzel roll for dipping PAIRING: SOFTLY COVERED IN DARKNESS A Carolina Dark Farmhouse, 99% LOCAL 3RD: ENTREE: Whole roasted BBQ Lions Mane mushroom, sea island red peas, blackened onions, little gem and fennel salad PAIRING: LOVE LETTERS A Carolina Hazy Double IPA, 92% LOCAL 4TH: INTERMEZZO: Strawberry ice cream, pickled rhubarb, strawberry crunch (like the pops have) Small spoon 5TH: DESERT: cornmeal blondie, carrot aqua faba “fluff”, candied carrots, carrot caramel sauce PAIRING: SUMAC TONIC A Carolina Foraged Gruit, 100% LOCAL THE COLLABORATION: When we opened this brewery, we made a decision to foster relationships and community by way of the many intricate decisions we can make each day. These decisions range from the ingredients we use in our beer; the way we handle our spent grain and waste and how we engage our space and the community. Some people call it slow, we call it “Thoughtful.” Because of this mission, every beer we make begins with a commitment to sourcing local and building relationships at every level and opportunity possible. All of our beers average 95% locally sourced ingredients. We have been collaborating with local growers, farmers and chefs since before we opened our doors in 2015. Two of these longstanding collaborators have been Matt Martin and Freshlist. Matt Martin is a good friend and one mighty fine chef! Matt is the Head of Culinary Operations for Freshlist AND one of the two owners of Title Belt Ice Cream along with Adam Duke of Dukes Bread. Freshlist’s mission is to strengthen our local food system. They accomplish that by assisting small Independent farms in areas like distribution and logistics. Helping the farmer stay on and the farm, doing what they do best being shadows in a field. Freshlist provides our area restaurants (and breweries!) with harvest to order produce which gives restaurants the best ingredients possible! This dinner series will be a showcase of the amazing produce from Freshlist and will be a night full of fun creative vegan dishes that will of course leave you saying “Wow, I can’t believe that’s vegan!” We are stoked to be collaborating in another way with these incredible folks!
