Explore Khmer cuisine through kreung If you ever visit a Cambodian home, you’ll most likely hear the following question: Nyum Bai noh? It means “Have you eaten yet?” It’s a gesture to guests wishing them to be full and happy when they leave. Seri Chao of Seri Cooks will share that same feeling of love through food in this class on Khmer cuisine and culture. In this program you’ll learn all about making kreung, a classic Khmer paste using turmeric, lemongrass, galangal, garlic, and makrut lime leaves. It is the foundation for many authentic Cambodian recipes, and the two dishes participants will get to try are salaw machu kreung (hot and sour soup) and sach ko jakak (lemongrass beefsticks). Please note: there is no vegetarian option for this class; the soup does not have meat, but will contain fish sauce and fermented fish paste. All proceeds from ticket sales go towards supporting the Culinary Literacy's Center programs for youth, neighborhood engagement, and English language learning. Seri Chao is a home chef who started his culinary journey with Khmer cuisine after his mom made plans to move back to Cambodia. Teaching him the original recipes her mother taught her instilled a sense of yearning to cook even more. He started his YouTube channel “Seri Cooks” making some of his favorite Cambodian dishes like salaw machu kreung (hot and sour soup with pork and vegetables) and kaw sach jrouk bae jawn (caramelized pork belly and eggs). During the pandemic Seri often hosted live-stream cooking shows, trading techniques and answering questions with audience members, and sometimes the occasional friend would pop-up at the house for an extra plate.
