POSITION SUMMARY Under general supervision, interprets nutritional guidelines, standard and special dietary requirements, and plans and prepares modified diets and menus; directs dietary personnel in the preparation and service of foods; assists in directing dietetic educational programs and teaches basic food and nutrition principles to dietary personnel, nursing and nurse aides; Assesses each patient on a modified diet and makes changes based on patient’s medical/physical condition. Provides education to patients on the importance of maintaining proper nutrition and modified diet. DUTIES/RESPONSIBILITIES The following duties and responsibilities will be primarily at JITC and Joliet Treatment Center, and possibly other IDOC facilities: Plans and develops general and modified diets for patients based on the patient’s medical/physical condition, makes changes in diets based on assessment. Provides direction/education to dietary staff in the areas of food preparations, portion control, modified diet, sanitation procedures and stock maintenance in accordance with Public Health Standards. Assists in directing dietetic educational programs and teaches basic food and nutrition principles to dietary personnel, nursing staff and nurse aides. Conducts regular review of food, related supplies and equipment in the storage areas and on the units. Adjusts and substitutes food on menus based on availability. Conducts random sample review of meal quality and proper food preparation on all shifts. Performs quality assurance checks including sanitation, food production and physical plant. Provides education to patients in regards to the importance of maintaining proper nutrition and instruction for modified diet Advises nursing personnel in feeding, portion control techniques and modified diets. Participates in requisition of foods, supplies and equipment. Maintains proper sanitation and safety standards in preparing, serving and storing of foods; inspects quality of food received and stored. Maintains food service records and prepares related reports. Participates in any multidisciplinary team meetings as it relates to diet and nutrition. Minimum Requirements: JOB REQUIREMENTS The following requirements list the minimum to qualify. An equivalent combination of education and experience may be accepted. LICENSING: Current Illinois license as Dietician Nutritionist CERTIFICATION: Current CPR certification Food Service Sanitation Certificate from Illinois Department of Public Health or Certified Food Protection Manager (CFPM) from a program accredited by American National Standards Institute (ANSI) Conference for Food Protection. EDUCATION: Knowledge equivalent to four years of college with courses in dietetics. Bachelor’s degree preferred. PREFERRED EXPERIENCE: Requires working knowledge of: large-scale food service procedures and practices. dietetics and food services management, including nutritional values, costs and accounting. modern methods, materials and appliances used in large-scale food preparation and service. health and sanitary requirements applicable to large-scale food service. plan modified diets and menus. instruct personnel assigned to the food service. teach basic food and nutrition principles. direct quantity food preparation and cooking with economy and efficiency. judge food materials and to make estimates of requirements and requisitions of needed food, supplies and equipment. maintain satisfactory working relationships with other employees of the department. Strong interpersonal, and verbal and written communication skills Excellent problem solving skills and strong organizational skills Ability to develop and deliver presentations, and facilitate meetings Must possess critical thinking skills and ability to independently solve problems and create processes Must be a highly organized and detail-oriented individual who is capable of performing under a variety of requirements and deadlines.
