Skip the piecemeal, why don't all Coffee Shops Unionize Together?

Hello. First, I'm not a barista. I work a job in an industry that's arguably got the strongest union in the country (I'm not a cop). We have good work rules and great pay. Everyone should have a union. Starbucks stores are unionizing around the country, as is Amazon. Why wait? I bet we could figure out how to get (hopefully) all the coffee shops (then more) in the area unionized at once. Let's do it. Power to the people.
