Join Auguste Escoffier School of Culinary Arts and learn how to cure, brine and smoke a variety of food, including shrimp, trout, & more! In this cooking class, raise your preservation game by learning how to brine and smoke products with the help of Escoffier Chef Instructor Richard Jensen. In this informative and fun class, make a dry cure and brine a variety of menu items. Chef Jensen will also teach how to expertly set up a smoker and overview how to properly time your product for the ideal finish and flavor. Menu: Smoked Tomato Ketchup, Brined Smoked Shrimp, Cured and Smoked Trout, and Smoked Chilies Where will the class be delivered at? Central kitchens Who do I contact with questions? Class registrations can be refunded through Eventbrite up to 7 days prior to the class date. Class registrations are non-refundable less than 7 days prior to the class. Missed classes may not be made up. The school reserves the right to cancel any class not meeting enrollment standards and to change recipes based on product availability. *It is extremely rare for a class to be canceled due to weather. Is there an age requirement? Students under the age of 18 may attend our classes when they register and attend the class with a parent or guardian.
