Amuse: Harissa Spiced “Cracklins”
First: Hickory smoked ribs dressed with honey apple cider coolis & micro corn
Second: Spring Jowl Terrine-24hr braised jowl, black pepper ricotta, baby collards, pickled ramp pesto
Third: Sous Vide “Tomahawk Chop” with candied leeks, peach mostarda, crispy birds in a nest
Dessert: Mama Hutton’s Ginger graham pineapple bundt tart with cherry compote & triple churned vanilla

About Steve Baker:
Mr. Baker has been raising hogs for nearly 50 years. No growth hormones; just fresh, healthy, & local pork to your table. "We strive to be truly Farm to Table. Along with raising the hogs, we grow their food source and built a USDA facility to process our hogs here at Baker Farms. We are one of the last independent hog farmers around, and the only one who does hogs exclusively in the region."
