This Saluki EC Speaker Spotlight features Curt Jones(Beaded Distribution, Dippin' Dots, 40 Below Joe) and Nelson Fernandes (Green Roof Team) The Saluki Entrepreneur Corps is excited to continue its Speaker Spotlight series by highlighting Sustainability Entrepreneurs in honor of Earth Day. This event features the likes of Curt Jones(Beaded Distribution, Dippin' Dots, 40 Below Joe) and Nelson Fernandes (Green Roof Team). About Curt Jones: Curt Jones is the founder of the well known Dippin' Dots but now owns a new company that uses the same freezing process Dippin' Dots does; 40 Below takes classic food and beverage items and elevates them into unique, novelty snacks using cryogenic technology. Using their custom made equipment combined with a freezing methodology based on liquid nitrogen at -320°F, they are able to capture all of the fun and flavor in your favorite foods and beverages while maintaining the highest quality and freshness. Brands include frozen coffees, teas, whey proteins, as well as, margarita, strawberry daiquiri, and piña colada mixers. Curt and his team are awlays working on new products and the newest product provides a sustainable solution while using locally grown fruit. About Nelson Fernandes: Nelson has transformed an existing green space into a multidisciplinary innovation hub for participatory learning known as the SIU Green Roof. He also created the Young Entrepreneur's Podcast and social media campaigns to build the startup's brand. He initiated and led 4 capital projects and managed 21 students after securing over $15K in academic grants and crowdfunding.
