A five course vegan tasting menu centered around seaweed and foraged ingredients. Chef Cameron Dunlap has been curious about regenerative aquaculture and believes seaweeds are an important part of our way forward with food. We are excited to partner with Blue Evolution seaweed because we share the same dream of bringing seaweed from the ocean to your kitchen table! Our vegan tasting menu features many different applications of seaweed throughout all five courses. Blue Evolution At Blue Evolution, we're seaweed people on a mission. By farming seaweed, we sustainably source nutrition from the ocean, reduce dependence on freshwater for food production, and mitigate ocean acidification. Veganizer Veganizer partners with omnivore restaurants to host vegan popup events. The Portland chapter is led by vegan food writer and content creator Waz Wu. Growing Gardens Founded in 1996, Growing Gardens uses the experience of growing food in schools, backyards and correctional facilities to cultivate healthy and equitable communities. Growing Gardens programs Home Gardens, Youth Grow and Lettuce Grow support this mission, working to create equal access to healthy food, sharing resources, critical education, and training.
