Some wise gourmets have argued that every one of the world's cuisines contains a pocket food -- an edible Russian doll, a food-within-a-food, typically consisting of a dough or starch swaddling savory centers. In this genre, the empanada is a poster child, endlessly versatile, a portable pocket that contains a tiny world of flavor. To master this dish, look no further than Chef Adolfo Garcia (LaBoca, High Hat Cafe, Ancora), a New Orleanian by birth and a Panamanian by heritage. In this lively demonstration-style dinner, he'll teach the ins and outs of the rich dough, multiple fillings, and assembly. Your ticket includes a complete dinner and wine. About the InstructorAdolfo Garcia grew up in New Orleans, the son of Panamanian parents, and fuses the tastes of local seafood and Creole dishes with the flavors of the Latin American food he ate at the family dinner table. He is both a culinary traditionalist and pioneer, willing to try new recipes yet remaining faithful to the classic food of his hometown, exemplified in his restaurants High Hat, a classic New Orleans café featuring Southern fare, and Ancora, his authentic Neapolitan pizzeria next door. A graduate of the Culinary Institute of America in Hyde Park, N.Y., Chef Adolfo sharpened his cooking skills and knowledge in London, Madrid, and New York City before returning to his Crescent City home in the late 1990s. In 2000, Garcia and business partner Nick Bazan opened RioMar (now closed), followed by LaBoca in 2006. Still on a roll three years later, he opened a Mano (Spanish for "by hand") and lived up to the name, fashioning culinary specialties just that way. Accolades include a Mano (now closed) as the 2010 James Beard "Best New Restaurant" semifinalist and Garcia as a "Best Chef for the South" semifinalist. New Orleans magazine named him "Chef of the Year" for RioMar and LaBoca and The Times-Picayune included RioMar in its Top Ten Best Restaurants in the city. FAQsWhen is check-in? Our doors open 15 minutes before the scheduled start time, and class will begin promptly. What are my transportation/parking options for getting to and from the event? You will find ample street parking and several paid parking lots in the blocks surrounding NOCHI. The streetcar also runs directly outside our building! Do I have to bring my printed ticket to the event? No! We'll be checking names on our guest list. What is your cancellation policy? Tickets are transferrable and non-refundable. We will make an exception to this policy if you or anyone in your party tests positive for COVID-19. If fewer than 12 tickets are sold prior to Friday, April 29, this class will be rescheduled. In the event of a class cancellation, either due to COVID-19 or under-enrollment, ticket buyers will be offered a refund or credit. What is your COVID-19 policy? We are always keeping a close eye on the ever-changing case numbers and guidelines. In compliance with the City of New Orleans mandate, we do require either proof of FULL vaccine or <72-hour negative test. We may also ask that you wear a mask while moving throughout our building, depending on city guidelines at the time of class. Are there ID or minimum age requirements to enter the event? We serve alcohol to anyone age 21+ and will be checking IDs upon arrival. May I take photos during class?
