Join our pitmaster, Ben Tzinberg, and guest smoke master, Shelton Steele, for an evening of in depth discussions and demos of all smoked meats! We'll prepare chicken, sausages, pork and beef to smoke on a number of different devices - including our CUSTOM 500 gallon PRIMITIVE PITS smoker!
Not only will we talk about home use AND competition barbecue, but we'll also EAT it!
WHAT TO EXPECT:
MIX & MINGLE: While you enjoy some of our finest house made and local charcuterie and sip on beer from a local brewery of one of our favorite wines, our class instructor, Shelton, will give you an overview of smoking meats. PREP, SEASON & SMOKE: Next, we’ll prep our meats, season them up, and head outside to throw it on the smoker. Ben and Shelton will give you a step-by-step instructions and explain the whys and hows each step along the way. LEARN: You’ll learn the basics of sourcing and prepping different meats for smoking and discover tips, tricks, and techniques of smoking for friends or in a competition. We’ll also discuss the nuances of using different ingredients (i.e. charcoal vs. wood and different kinds of rubs) and talk about how to build a great smoking fire for the smoker you have or are looking to buy.TASTE: Towards the end of the class, you’ll get to taste all the meats we smoked during class.DISCOUNT: Bring a cooler!
