Welcome Drink upon Arrival: Mojito Cider 1st Course | Picnic Grazing Plate & Strawberry Cucumber Granita I Pairing: Citrus Haze Cider * This course stands on one item: a personal plate to graze on throughout the entire experience, one that's isn't cleared until the night ends, one that can be described as a charcuterie plate, but includes more than meat and cheese alone. A bright and refreshing Granita made with fresh fruit juice and garnishes. 2nd Course | Heirloom Tomato & Fontina Galette I Pairing: Tropical Berliner *Although rainy days may be the norm in April, this course will leave you feeling like you stepped into the middle of a warm summer afternoon. Tossed in garlic, basil, and balsamic, fresh tomatoes are baked inside a open faced pie crust. A personal deep dish pizza that comes alongside daydreams of warmer weather. 3rd Course | Cilantro Ginger Grilled Salmon & Triple Bean Salsa I Pairing: Pineapple Mango Cider *It's almost grilling season and we want to spread the word that steaks and burgers aren't the only option. Grab yourself a filet of salmon and throw it on the grill and you wont regret it. This dish is paired with triple bean salsa, cilantro and cumin, a reminder that outdoor dining is coming soon. 4th Course | Lemon Ricotta Stuffed Shells with Smoked Short Rib Ragu I Pairing: Double Enigma *We Couldn't host another Chef's Dinner without a pasta course from Chef Hunter Roloson. Baked stuffed shells have always been a staple in his family. This rendition with whipped lemon ricotta and basil is tailored for spring time. Topped with a smoky short rib tomato sauce, this dish is approachable and delicious. 5th Course | Torched Samoa Cookie Crème Brûlée I Pairing: Tessellation Cider *The finale, girl scout cookies. The end of April is the peak season for the sale of GSC in America, Samoa. Shortbread Cookies, Toasted Coconut, Dark Chocolate & Caramel. Those elements overlaid onto a Crème Brûlée will undoubtedly work well together. Crunch, Warmth, and nostalgia for a cookie that's been around for 56 years.
