A special workshop about all things bread baking & cooking with fire
Join us for a weekend of hands-on baking with wood-fired oven expert Richard Miscovich
In this workshop you will learn everything you want to know about baking with fire: We will discuss the different styles of ovens, compare the baking qualities, costs and thermodynamic qualities and - most importantly - bake a lot of delicious breads, from Flatbreads to rustic sourdough hearth breads.
Join us for a fun and informative class in the beautiful countryside setting of northern Vermont and return home with a new understanding (and appreciation) of wood fired baking and the craft of artisan bread making. In this class we will cover all the basics of natural bread baking with a natural sourdough culture while taking the nature and character of different oven types into account.
Topics include firing techniques, temperature control, steaming and adjusting your dough recipes. Different types of ovens will be discussed and participants will receive their own sourdough culture for home baking.
The class format allows plenty of time for discussions and Q&A and will end with a sensory tasting of the breads we made in class accomplimented by local vegetables, cheeses and condiments.
