Monterey Jack is one of a few cheeses that earns the rightful position as a true “American” cheese. It originated in the Mexican Franciscan friars of Monterey, California around the 1700’s. Jack is traditionally made from cow’s milk and is a semi-firm, cheese. It lends itself well to adding flavors.

Take home kits that will make 2 one gallon batches will be available the day of class for $10. Raw milk available to take home at $5 a gallon - but you will need to pre-order the milk by sending me a message.
