Love comes in many forms. Shredded. Sliced. Melted… It's time to get cheesy with Stem Ciders & Truffle Cheese Shop! Pairing : --A Salted Cucumber Cider (Paloma To-Go) // St. Angel - is a cow's milk cheese from France, St. Angel has a delicate, bloomy white rind with an inoffensive hint of mushroom-like flavor that becomes richer with age. Its interior pâte is rich & luscious with the delicate taste of sweet cream. The honey adds a nice twist to this combo! --Lava Flow Cider // Comte - is a French cheese made from unpasteurized cow's milk in the Franche-Comté traditional province of eastern France bordering Switzerland. It is classified as an Alpine cheese. The texture is relatively hard and flexible, and the taste is mild and slightly sweet. This cheese is aged in cheese cellars that are much like a cave. Want to bump up the sweetness of this cheese? Try it with the honey or figs! --Crabby Neighbor Cider (Real Dry Cider To-Go) // Gubbeen - means 'a small mouthful', but after one taste of this Irish farmhouse cow's milk cheese, you'll want more than just that. This mild, creamy washed rind shares an aroma of meadow flowers and light toasted hazelnuts, and when allowed to develop, it evolves into a complex bouquet of walnuts and mushrooms. The cows providing the milk for this cheese are housed in a barn on the same farm where the cheese is produced. The olives are a nice treat with this cider. --Raspberry Cider // Cabra Al Vino – is a semi-firm, goat milk’s cheese from Spain. Translating to “drunken goat”, this classic Spanish cheese is soaked in red wine that gives it a tangy edge, while the interior is more mild and smooth. The purple rind is a stark contrast to the white interior of the cheese. The cheese is soaked in red wine for 48-72 hours before beginning the aging process, which is typically 3 to 5 months. The finished cheese is delicate for goat’s milk, with a nice acidic tang, and a rich creamy finish that is supplemented by the subtle taste of red wine. Try with the figs. Accoutrements : Dried figs, local wildflower honey, olives and wafer crackers Gluten Free pairings are available with reserved ticket! Gratuity included in cost of ticket. Enjoy the pairing in-house or take it home with a can flight! Tickets recommended and can be purchased until 12pm on Monday 4/11. Limited day-of pairings will be available on a first-come-first-serve basis. *Truffle Cheese Shop will have a pop up shop in the taproom the day of the pairing to stock you up for the week!
