Enjoy some delicious mezcal from IZO Spirits while you paint your very own jicara (traditional mezcal cup) and learn about mezcal production Guests will be enjoy a pour of delicious IZO Mezcal while they are educated on the production, process and types of mezcal available. You will be painting a jicara, which is a dried out shell of a gourd, that is a traditional drinking vessel for mezcal in Mexico. One pour of IZO Mezcal (non-aged) is included with your ticket purchase along with supplies and mezcal class. Enjoy the patio vibe and weather at Barcoa Agaveria which has one of the best selections of agave in Arizona. The bar will be open for any additional purchases of pours or cocktails a la carte. From harvest to bottle, from “ground to glass,” every step of the process is meticulously controlled, resulting in a finished product that speaks to centuries of Mexican tradition and a proud heritage worth savoring. Agave is an “evergreen” desert succulent that has very little ability to handle frost, which thrives in the arid, warm weather regions of North America, Central America, the West Indies, and South America. Known for their large, sturdy, fibrous leaves marked by serrated edges and sharp tips, the vast majority of agave genus flower just once during their five to ten year lifetimes. Depending on the species of Agave the flowering spike can grow as high as 20 feet. As of May 2019, more than 270 varieties of agave have been identified, yet only about 40 are used to produce “agave spirits” such as Tequila, Mezcal, Bacanora, and Raicilla. The use of agave as a distilled spirit dates back to the 1500’s, when the arrival of the Spanish Conquistadors brought the art of distillation to Mexico. It was not long thereafter that native inhabitants acquired the knowledge and mastered the techniques to bake and process the agave plant to create the first distilled spirit of the Americas: Mezcal.
