Job Description
• Cutting meat from full carcasses of beef, lamb, and pigs under the instruction of the head cutter.
• Breaking down primal sections into roasts, steaks, and stew.
• Boning out primal sections for ground meats and sausages.
• Production setting, no retail and no boxed beef.
• Responsible for pre-operational set-up and breakdown.
• Responsible for following sanitation procedures during the production day.
Qualifications
• Proficiency with knife sharpening.
• Proficiency with a knife while boning-out and breaking down into steaks and roast.
• Must be able to lift 75 pounds.
• Must be able to stand and work during the production time.
• Must be able to work in a cold work environment of 45-48 degrees fahrenheit.
• Meat cutting experience necessary, but attitude determines applicant's aptitude, and we will train the right person.
• Must be able to follow instructions and follow The Local Butcher's processes for production.
Compensation
• Hourly pay based on experience.
• 2 weeks paid vacation after the first 6 months of employment.
• Paid health insurance after the first 30 days of employment.
• Full days pay on Fridays regardless of when the work is completed.
• No weekend work and no holiday hours. Paid holidays.
