Borrowing from his culinary travels and studying the smoke pit and jerk techniques used throughout the Caribbean and Creole country in the states, Marlon put together a robust and mouth watering menu, featuring entrees that pair savory and creamy cheesy grits with the delicious smoked meat of your choice and an equally as delightful sauce or gravy smothering it all! The meats and poultry will be available by the pound. There will also be a selection of homemade BBQ sauces that are already fan favorites from the food truck and a few new ones that are sure to be crowd pleasers.
