LIBERTYVILLE, IL — Even as the state is not yet allowing dining indoors, two restaurants plan to open soon in Libertyville. Las Monarcas is planning to open at a strip center on the south end of downtown and Anam Cara will open on Libertyville's north side, according to the Daily Herald. The Daily Herald reported in recent days that Edgar Huila and his mom, Maria Rosio Baeza, hope to open Las Monarcas in the next week and plan to serve up handmade tacos, tortas, burritos, tortillas and more. Justin Lindal and his business partner, Travis Kick, plan to open their cafe and bistro at 342 Peterson Road. Anam Cara Cafe and Wine Bar is planning to open in July, according to the business's website. Owners from both restaurants hope the state can soon enter Phase 4, which is when indoor seating will be allowed. "We've invested a lot of money into this. We can't go back," Huila told the Daily Herald. More via the Daily Herald
