Davies Vineyards For over 50 years, Schramsberg Vineyards has been committed to crafting extraordinary sparkling wines. Living and working on the Napa Valley Diamond Mountain property, the Davies family and Schramsberg team have focused on creating wines that reflect the passion and experience of the people behind each bottle. Laurent Sarazin has overseen all sales and marketing activities for Schramsberg and Davies vineyards exclusive portfolio of traditional method sparkling wine and still wine since August of 2001. A native of Lyon, France, Sarazin holds his bachelor's degree in International Marketing from the Institut des Hautes Etudes Economiques et Commerciales in Bordeaux Menu Welcome Bubbly -Mirabelle Brut Sparkling NV Antipasti Ahi tuna carpaccio with yellow beets and caperberry sauce paired with 2018 Schramsberg Blanc de Blanc Primi Seared Oregon wild caught salmon on a bed of organic spinach, fennel and orange segments paired with 2018 Schramsberg Brut Rosé Secondi Carlton Farms porterhouse pork chop , balsamic reduction , cranberry beans, and cipolini onion compote paired with 2018 J. Davies Cabernet Sauvignon Dolci Bosc local pear poached in sweet wine with cinnamon and cloves served with triple cremé brie paired with 2017 Schramsberg Cremant Demi-Sec Schramsberg Vineyards focuses on producing the finest and most complex handcrafted sparkling wines in California. Preserving century-old traditions, many of their viticultural and winemaking practices are still carried out by hand. Our tête de cuvée sparkling wines receive an impressive seven to eight years of bottle aging prior to release, the balance receiving two or more years. All of our wines are enjoyable upon release, but can also be cellared for 20 years or more. Most of Schramsberg’s viticultural and winemaking practices are carried out by hand: grapes are hand harvested, the wines are handcrafted, the bottles are stacked and riddled by hand in our underground caves.
