Our unique location in beautiful Santa Ysabel valley attracts thousands of locals and tourists every year. SUMMARY The job duties of Baker are mainly defined by the Production Manager. They are under direct supervision of the Production Managers and are to follow his/her direction and Dudley’s approved recipes, methods, and instructions. Responsibilities include scaling ingredients, mixing dough, preparing starters, dividing, shaping and baking a wide variety of breads and other baked goods. RESPONSIBILITIES The following are the duties and responsibilities of this position (all included but not limited to) Work in a team to prepare daily workstations (bring ingredients and flour bags to mixing station, oil pans, turn on proofer, turn on ovens, ensure everything is clean and ready for production, etc.) Scale fresh ingredients and mix the dough per recipe time/speed ensuring hydration & temp. Divide and shape dough with high attention to detail, consistency and precision. Ensure correct proving temperature, and hydration Bake and steam at approved temperature and time and regularly monitor baking ADDITIONAL REQUIREMENTS Must be able to lift 50 pounds throughout the shift daily. Ability to work in fast paced environment with highest quality standards, efficiency, and speedMust be hard-working and detail oriented. Working weekends, holidays, and night shifts.·Follow company employee handbook, procedures, signs and other safety and health policies and standards. Maintain good relations with co-workers and follow management direction. Punctuality, attendance, strong work ethics, teamwork and accountability are essential.
